Do I read this to mean that the "Unknown . . . error . . . startscan" thing did NOT occur with 6.0, but only with 6.0.1? If so, couldn't we just uninstall 6.0.1, and reinstall 6.0.0?

I agree with Kurt - as you are one of the lucky ones who have managed to scan with Acrobat 6 in its original incarnation then it looks like you might have to stick with it.
The latest drivers for this scanner seem to be quite old so it there may not be much of a response from HP. You could of course try reinstalling the scanner again, now that you have updated Acrobat.
You could also use the workaround of scanning to TIF and then converting to PDF.
