You cant change the colour of the text with the link tool. You have to use the TOUCH UP TEXT TOOL - this can be found in Tools>Advanced Editing>Touch Up Text Tool
Then select the text you want to change, right click (or if you only have a one button mouse, control and click) and select properties.
In the box that appears click on the TEXT button at the top. Here you can change the size etc. To change the color click on the little box next to FILL.
And thats it! Quite long winded way of doing it.
