    Convert it to outlines first. [ctrl]+[shift]+[O]

    You can also add a fill to live text via the appearance palette and apply/modify a gradient via the gradient palette.

    Click on the little arrow and "Add new fill" then select the gradient.

    If you want each letter to contain the whole gradient,

    Select text (baseline, not highlighted), effects>path>outline object

    Then apply the gradient.

    As the same with the add new fill in the appearance palette, the text will remain live and editable.

    Or Timothy's method, Appearance with Text selected, Options, Add new fill and just click on Gradient tool. This will give Text as text, gradient fill. You can, of course use any gradient background (vector or raster) and use Text as Clipping mask as well and that stays editable text.
