Completely removing (with installer AND removing manually all Adobe files) and reinstalling 8.1.2 should solve your problem.

Actually before trying that do the following:
quit any adobe product that would use Adobe PDF Printer (driver).
Next go to printer Utilities and remove the PDF Printer Item in Printer setup, and close.
Now use find file and remove all PDFPrinter (drivers and place in Trash.
Now Open Acrobat. Then go to Help menu and choose detect and repair.
Now uncheck PDFMaker and check PDF Printer. Then choose Okay.
Now see if PDF Printer is back in the printer Utility. If so your all set.
Now try to create a PDF. If it doesn't work, Try some type of systems Utility to remove all Caches (Pdf printer has a Cache file that some times goes Bonkers. but the only way you can remove it is use such an utility to remove all Caches.
Now try again.
Should work.
If not do as Nightwatch said.

I agree with pjones. The specific PDF Printer files you should remove before doing Help | Repair are:
/Library/Printers/PPD Plugins/AdobePDFPDE800.plugin
/Library/Printers/PPDs/Contents/Resources/en.lproj/ADPDF8.ppd
~/Library/Printers/Adobe PDF 8.0.app
/private/etc/cups/ppd/AdobePDF8.ppd
/usr/libexec/cups/backend/pdf800
You might have to use the 'Go | Go to Folder...' command to find some of them.

Thanks to all for taking the time to write back and your hints and suggestion.
But, I am still experiencing the same issue. A pdf icon shows on my desktop for a split second and then it disappears! This problem is not consistent from site to site and document to document. Example: If I am online and accessing a secure page (needs login) and I want to capture the page, say a copy of a bill that I've just paid, I do the "print" command and then "Save as PDF" from the drop-down menu to save a digital copy of the receipt, this process sometimes works and most of the times it doesn't. I have fewer problems with internal docs. I am running OS 10.5 and I did not have the same problem with OS 10.4 Panther. Also, this issue is not localized (one machine); I have the same problem on Mac Book Pro running the same OS.
I tried running "CUPS-PDF 2.4.6.1", reinstalling and uninstalling apps, rebuilding, installing and uninstalling print drivers and everything that have been suggested, including your suggestions. I’ve also taken my laptop to one of the Apple stores (Genius Bar) in the area and showed/demoed the problem to them and they were stomped too and couldn’t figure out why this is happening. Any other ideas?

Are you suggesting updating to Adobe PDF Printer Driver Plug-in 8.5.4? No I did not and I’ve just tried Adobe and Googling for 8.5.04 and only found Adobe PDF Printer Driver Plug-in 8.5.1, where did you download Adobe PDF Printer Driver Plug-in 8.5.4? Link please.

I think by "X.5.4" he meant Mac OS X.5.4.

I don't suppose OS 10.5 is moving the file to your user downloads folder or something silly like that? You never know :-) Have you tried searching for the file in the system by name?
Also, I'm not entirely sure if Print | Save as PDF uses Adobe's PDF Printer or does it actually use Apple's Preview? If you simply open a TextEdit document and print it using the "Printer: PDF Printer 8.0" setting, does it work?

If you create a Pdf by going just to print menu and choose save as PDF then your using the Macintosh's built in PDF engine.
IF however; you have gone to print menu or page setup menu and choosen AdobePDF then yuour usin gAcrobat/Distiller to create the PDF.
