Default Black text appearing in placed eps

I have come across an unusual situation yesterday where black text is appearing in placed eps files. The supplied offending illustrator eps contains legacy text that has not been updated then saved to eps. If this text is updated in illustrator it has no fill or stroke and does not show in preview mode. The eps has passed through Quark to PDF via JAWS I think (I did not create this file). I have run all the tests I can in Acrobat and can find no problems with the file checked overprinting the lot. The issue is that when processed the text of no fill is becoming black. This graphic has been used several times before without this happening. The only place in which I can replicate this is preview and mail for some odd reason probably related to quartz.
Funny thing is I only noticed this when e-mailing the files to Glenn a regular user of this forum. Glenn has been good enough to check the PDF file in Pitstop for me. The text is showing as spot color called none. If he changes the colour space of this text to either Gray or CMYK then it converts to black. I would like to know why this has happened and if there is a way to catch this issue preferably within Acrobat so far I have been unable to find a preflight condition for this.
If I create an eps in illustrator containing type of no fill or stroke it does not even embed the font in file. I would have hoped text that has not been updated not to even make it across to the none adobe side of the eps. Hope someone can help shed some light on this many thanks in advance.

    Hi Mark,

if you can send the original ILL file, the EPS and the PDF, I can look into it.
The special color "None" is the opposite of the special color "All". Objects defined in "None" must not be draw in any color. Some people use it to get rid of objects colored in a specific spot color.

Peter, thank you for offering to take a look at this for me I will send the files my email. I have a 400 page A4 catalogue project that is coming up very soon and will contain anything between 10,000 - 15,000 graphics a large % of these will be supplied art by outside sources the logistics of inspecting the integrity of every file would be near impossible. A lot of this will be handled by scripts. Workflow output is always single page PDF's I just want to find a way to either catch this in Acrobat with preflight or know if the issue is down to something a miss with the printers RIP settings.
