Default changing 4 color black to 100% black

I am receiving pdf files that have black type as 4 color. When I go to Touchup text attributes to change the black in CYMK slider to 100% K the black stays 4 color. What gives?
    (I'm using Acrobat 7.0 also I don't have PitStop)

You cannot set CMYK colors, though the Macintosh fools you into
thinking that you can. You can only set RGB - the Mac translates.

Explain why you can't with a Mac and can with a PC ? Though I am not into Printpress (only reason You would deal with CMYK anyway) I and others would like to know why?

The colour picker on Windows doesn't show CMYK at all. It's only Mac
    OS that does.

Does that mean neither, PC or Mac deals with CMYK, It just that the Mac appears to show it.

    Hi pjonesCET

This is correct. The TouchUp tools only handles RGB - no matter which color chooser you are using.

The edit color in CMYK/Spot/ICCbased/... you need 3rd party tools.

    Tools>Print production>Convert colors

•uncheck "preserve black" in Conversion options

•select "don't include profile" in Conversion options

•set to gray gamma 1.8 or 2.2 for destination

You may need to run this a couple of times depending on PDF content vis-a-vis the Document colors section at the top of the dialog, and choosing the appropriate action
