You change individual colors to RGB, CMYK, or Lab: if the color is a swatch, double click the swatch in the Swatches palette and change its Color Mode. If the color is not a swatch you can change its mode from the Color palette, or you select Add Unamed Colors from the Swatches palette and do it there.
If you have a lot of colors it can be done via a script. ID has no grayscale space, but a script can convert colors to black only percentages. Here are 3 scripts for converting all colors to CMYK, RGB, or Grayscale (0|0|0|K):

The grayscale script gets the luminosity of the color and converts that to a K percentage, so its not a color managed conversion.
