Re: Convert 4/c image to single Pantone color
Basically just change it to a Grayscale and copy/paste that into a spot color channel in a new CMYK file and then SaveAs a .psd; a Photoshop PDF or a DCS2 (depending on how you will be using the file).

Re: Convert 4/c image to single Pantone color
Image>Mode>Grayscale
Then the mode "Duotone" will be available, so go to:
Image>Mode>Duotone
In the dropdown called "Type" (of image) at the top of the dialog, instead of Duotone, choose Monotone.
Pick the Pantone color you want ... then play with the curve to get the density you'd like.
Save as an .eps file.
