I work at a newspaper and I just bought acrobat pro to convert color ads made in pdf to grayscale. What is the best way to do this?

You must have Acrobat Professional 7. Choose Tools > Print Production > Convert Colors. In the Destination Space menu choose one of the grayscale profiles (like Gray Gamma 2.2). Click OK.

It's an interpretation of how bright the screen should be. You choose the one you like.

If I'm preparing the pdf file for print, what do you think would be the best setting. Should I go to a "30% dot gain" setting (which is what our printer's is)?

The safe way would be to do a test page with the printer and choose different settings to see which works the best.

The Gamma rating will adjust to your screen for the best appearance
(viewing). The dot gain rating will adjust based upon the desired output
intent (print).
I would follow the printing standards route if this is your eventual
destination.
20% in the case of your printers if they have dictated.
