Converting color PDF to grayscale, whats the best way?

To convert a color PDF to grayscale in acrobat pro, i do Tools/Print Production/Convert Colors. I select Gray for the top window and from what i understand i have to choose for profile one of the Dot Grain selections. Which is the best for using for high quality print? Are there any other settings that also need to be noted when doing this?

When using Acrobat Professional, activate the "Convert Color" and select a Gray destination colorspace.

The only gray selections i see in the Destination Space is Gray Gamma 1.8 and Gray Gamma 2.2. Whats the difference? Which is better?
