Default creating an editable pdf document

I am kinda new to Acrobat Professional 7. I am exporting an IndesignCS2 file as a pdf. When the pdf is opened in Acrobat Professional 7 it is not editable. Meaning I cannot delete or add text. Can Acrobat Pro 7 do this? Is there a setting I need to activate? Please help, I have hundreds of files that need to be editable in Acrobat.

    thank you,
    Leona

What do you mean by ediatble? Any changes to the doc should be made in the InDesign file, then a new PDF created.
