Detailed Masks - Macromedia Fireworks

I've been working with CorelPhotoPaint for about 6 or 7 years, but only recently began working with Fireworks. I am attempting to locate a good tutorial that explains how to lift very detailed photos off of complex detailed backgrounds without all of the jagged pixelated edges. I'm guessing that it may have something to do with layers and color channels, but I don't know where to begin. Can anyone help? Thanks in advance! :o)...
