Distiller causing rough EPS in PDF

I am using Distiller 5 (in Classic) and QuarkXPress 6.5 in OS 10.3.8.
When I make a high resolution PDF (PressOptimised - printing to a Postscript file from Illustrator, using the "AcrobatDistiller on Localhost" method, and sending the file to a watched folder), EPS illustrations (ie. Logos), which were created in Adobe Illustrator, always come out with 'jagged' edges - very rough and unuseable for printing from.
When I make a lower res PDF (ScreenOptimised) using the same Quark file, the problem has gone!
What setting is causing this? I don't have the time to mess around with all of the different possible variations. Does someone out there know the answer?

What version of Illustrator? Recent versions of Illustrator support
saving as pdf.

Hit COMMAND-D - what is the 'PDF Producer' - also, check the
preferences, do you have SMOOTH LINE ART selected?

The PDF Producer is: Acrobat 5.0.5 Distiller for Macintosh
The effect on the Illustrator logo is like a really bad clipping path in Photoshop - instead of smooth curves around letters, the edges are wavy and made up of irregular short lines that don't follow the line of the true curve.
I'm trying a test, by turning off all the possible settings I can, one by one, and making a test PDF, to see if I can find the one setting that is causing the problem...
