Editing a PDF document with Acrobat Mac

I would really appreciate some help!! I want to make some changes to PDF documants which I use as a template for work. I don;t know how to edit the forms. When I go to edit fillable forms - it is all dimmed. I tried checking the security but it doesn't have any security restrictions on it either.

OK - *what* created the PDF?

Go File/Document Properties/PDF Producer/
