editing PDF in Acrobat
Is there any less painful way to edit PDF files than with Acrobat Pro ? I am trying to edit text in scanned documents and I constantly am getting error messages about font encoding that prevent me from changing fonts. Acrobat seems to understand the there are word-font-objects, but it wont let me change them.
Barring an easier edit, is there any good way to export PDF files into formatted text ? I tried the export command and it comes out garbage-y.

There probably isn't a less painful way to edit PDFs, but if you want
to do large scale editing of scans, maybe PDF isn't the way to go.
Scanning to a simple OCR package that makes plain text might be
better.

The problem is that the docs I am trying to edit are already scans, turned into PDF and then I OCR-ed them. Editing is a pain.
There must be something that allows you to treat the PDF more like a text document, somewhere ?
