I'm running Acrobat 7 Professional on an IMac G5 with Panther. 1GB of RAM. Sorry this is so long. Hope it doesn't keep helpful people from reading it. :-(
I'm frustrated because the editing that I used to be able to do in Acrobat, I am not able to do any more. Up til version 5 (on OS 9) I didn't have problems with this. Why would Acrobat take away such helpful features? After reading ALL the forum questions that I could find related to this, it seems most people just accept the fact that they can only make VERY minor changes. What is the point of having the full Acrobat program if you can't do much more than you can in Reader? Sorry, I'm just venting, although if someone has an answer, it would be nice.
I am not trying to alter other people's files, only my own, and going back to the original program (Quark 6.5) is a real pain when all you need to do is make a little change.
Another thing is that it seems others can make changes to text that I am not able to make. I have tried all the things people suggested and am still getting messages like "All or part of the selection has no available system font. You cannot add or delete text using the currently selected font." I control clicked on the text line and went to properties but it won't let me change the font.
I am making a catalog of jobs and have saved pdfs from Quark with crops and page info and it is the page info I am trying to change. As far as I know there is no way to change that font anywhere before Acrobat, but the font (T1) is not a font that I have ever heard of and if it is supposed to be an abbreviation for Truetype or something, I should still be able to make some kind of change.
I've also had problems editing objects. I cannot seem to do much of anything that I was able to do before.

Adobe has listened to the comments of the companies who manufacture the
fonts. You can only edit the font - if the exact name of the font (it
does make a difference) is installed on your workstation.
Older versions allowed much more flexibility ....
