Are you talking about putting facing pages opposite each other in Acrobat?
If so, the answer is View > Page Layout > Facing.
If not, please explain a little better.

I have white inside margins that will be eliminated when the document is bound. If you view "facing pages" in Reader, you see those margins, Also, a design element (color bar) that spans the spread is broken by the gap formed by the inside margins.
I'd just like to show a PDF without the margins, ie spreads as they would be seen when bound.

I assume this is for something like post and (Chicago) screw binding? If I understand the problem correctly, I don't think there is a way to do this in InDesign. You could, though, crop the pages in Acrobat Professional (not sure if the Standard edition includes cropping). The Acrobat Crop Pages function allows you to apply cropping separately to odd and even pages, so no matter how long your document, you could do it in two steps.
BTW, are you sure that the printer needs the job set up this way? I would think that in many cases, they would be able (might even prefer) to create these inside margin areas as part of the imposition process.

This is a manual that's being tested, so we're printing on the cheap. I'm going for color laser and Velobinding the sample copies. Thus we need the gutter -- will lose about a half-inch on the inside edges.

Makes sense. Do you have Acrobat (not Adobe Reader)? If so, then the Crop Pages function will do the trick.

If you make the PDF for the printer with a Half inch bleed then you will have plenty to cut off and won't need white boarders.
