JPEG is platform neutral, so your files should open without trouble on any platform. Your CD, however, needs to be in format Windows can read, and your files need to end with ".jpg" for Windows to know what they are.

Formatting your CD as ISO 9660 or as hybrid should work to read the disc. Any Photoshop format should be readable at the other end if Photoshop is in place. Otherwise, find out what file formats are compatible. TIFF? EPS? I hesitate to suggest JPEG as it is lossy. Another factor could be mode. Find out if they need RGB or CMYK. All Photoshop files should be platform-neutral.
