That is not true. I created a form that works fine with the SUBMIT button and I receive the FDF in the email. No Problem. What's killing me is that now, no matter if I use a URL or the mailto: command, it tells me the Address field is empty.
Yet, I have one created identically that still works beautifully. There are inconsistencies. The Mailto: command works, but the program is fickle.

It works on your copmuter, but it wouldn't work on mine even though I have Acrobat Professional. Nor would it work for an AOL user, a Hotmail user, a Yahoo mail user, an Outlook over Web user, or anyone else that wasn't using a MAPI-compliant email client.
The unpredictability of end users' systems is what makes email-based submissions impractical. if you can control that (like in a corporate environment) then it will work fine.

Do you know how to add text to a .PDF? I have several documents that I have downloaded from someone that I would like to fill out. Is there a way to do it? Acrobat will not allow me to add text.

Use the text touch-up tool and Ctrl-clik wher eyou want to add text.
Make sure you're using Acrobat, not Reader.

You might want to try <http://www.re-pdf.com>.
Simply upload your PDF form with fields (WITHOUT a submit button!).
You receive a link pointing to your form on the server, which now contains a submit button.
You can get the results (the fills) in XML, HTML or as an Excel file (CSV).

This may work but in my opinion it would look extremely unprofessional - it is like "web developers" who give their email address as [email]webdeveloper@hotmail.com[/email]!
If you're a bloody web developer then why can't you pay USD2 per month to get a proper email address or is that too hard - it doesn't inspire me with confidence!
It may work for some people though! :)

After the first 5 forms, you pay to receive the data ($70 one time fee plus $15 per form/month).

FDF = Form Data Format
There is no actual submit button (that I know of) but you can create one by creating a button, then under the "Actions" tab select "Submit a form" and enter the email address of the recipient.
