freehand black frustrates my printer
I create things with usually two-three spot colors. When I send it to the
printer though, the black which is there by default always screws it up- and
I can't replace it in the color list with a Pantone process black even
though I try. Please help!

How is it screwing things up?
You cannot replace the default black, it is hardwired in. But if you
don't use it, it shouldn't show up in your separations list. If it is
then it's there somewhere you need to hunt it down with Graphic
Find/Replace.

if you go to the print setup (print from file menu) and under separations how many/which colors do you see????
