How accurate is the overprint preview?
I am looking for a bright red PMS to be overprinted on tan paper (Desert Storm which is close to PMS 7503.) When I simulate the tan paper color using PMS 7503, the Overprint Preview in IDCS2 causes PMS 185 to resemble PMS 193. Can I trust color change I am seeing on the monitor? Thanks for your advice.

Probably close, but you won't know for sure until you see ink on paper. You
are seeing a sold ink, (two) being simulated in a mix and prepresented in
the RGB color space of your monitor.

It's pretty close, but certainly not perfect. You really should have a
long talk with the printer about this. He should be able to guide you on
what you'll be dealing with.

I don't think so. ID doesn't have color management for spot colors, so when you turn on Overprint Preview the preview shows how the two colors would overprint as process colors given the document's CMYK profile, not as a solid ink on an (uncoated?) colored paper.
Photoshop does have spot color management, but you would probably need a custom overprint color set in duotone mode to get an accurate preview.
