What you can do and how depends of the specific forms and on the program(s) you have. If what you want to do is change information in fillable form fields, you can do it with the free Reader. If you want to change fixed text on the forms, you would need the full Acrobat, provided that changes are allowed. Please provide more details.

If all you want to do is to change some text in a single line, it works almost the same as the I beam in any word processor, only that much more slowly. You can use it to put an insertion point to add text or to delete text with the backspace key. You can use it to select some text and just overwrite it, or select it, delete it and then write new text, etc.

It may say that changing content is allowed but, if Claudio's advice doesn't work, you'll want to verify that the form isn't actually a scan. If that's the case, you can't use those tools to change the text unless you OCR the form first.
