Without a working install of 8.1, I think it is, you don't.
I'm willing to be wrong, though... You may have a complete installer
disk there, rather than just the updater like I got the first time
around. Try to boot it. Stick your 8.5 disk in the drive, then shut
down. Now hit the power button and immediately hold down the "C" key
until either the desktop shows up, or you get a never-ending flashing
question mark. If you get the question mark, you're outta luck. You and
your machine *CAN'T* install it. Maybe it's because your machine can't
handle it (or at least, Apple claims it can't) or maybe it's because it
isn't a bootable CD. Either way, you're pretty much dead in the water
until you can boot 8.x to do the install. If it boots off the CD, you're
golden. Read the docs that are there, and you'll leran everything you
need to know about the HFS+ conversion and installing 8.5. You'll
probably want to do the format conversion first, since it's a "clobber
the current disk contents" operation, and you'd just have to go back and
re-install 8.5 again if you did that first.

Just as advice, you'll almost certainly want to at least put some more
RAM in it, or it's likely to run pretty "doggy" on you.

You don't need to change it to HFS+. OS 8.5 works with both HFS and HFS+.

Normally, you must erase and reformat an HFS disk to make it HFS+. However,
Alsoft has a program called Plusmaker that will do this without erasing
    anything.
