I've used IIS5.1 on Windows XP for ASP development, and I've used IIS 6 on the Windows 2003 server I'm deploying to, and I'm also using IIS7 on Vista. Although there are issues with IIS7 and Access databases if you're on Vista 64bit. For all of them though you may need to select certain options for IIS when you install it via Add remove programs (or Programs and features in Vista). Not exaclty sure what they were, but I've always checked everything.
