Illustrator CS -- Assigned Color Profiles do not stick!!

I am having this problem where every time I open an Illustrator document, I get the MISSING PROFILE box that says the CMYK document does not have an embedded profile. Then I can choose to leave as is (no color mgmt), assign current working space, or assign another profile.

I almost ALWAYS choose to assign my documents to the current working space and then I save the file. However, this doesn't seem to do any good.

Even if I manually assign a profile to a CMYK document using EDIT-->Assign Profile and then save the document, every time I open it up again in Illustrator, it gives me this message. Somehow, the color profile is either not being assigned or it is not being read.

For the record, I am using the same color mgmt settings for all Adobe apps.

Has anyone had this experience with a CMYK doc in Illustrator?

Could this be something that resetting the preferences might fix? The strange thing is, I see this on my home machine as well --and only with Illustrator. InDesign and Photoshop have no problem assigning profiles.

In what format are you saving your Illustrator files. EPS by any chance?
