Are there such a thing?
Is there a way I can permenantly set things such as "Hide Artboard" and "Show Grid" so that I don't have to go in an turn on/off everytime I start a new file?

Mike,
open *Adobe Illustrator Start_CMYK.ai* and *Adobe Illustrator Start_RGB.ai* (both are within the Illustrator Programm Folder), modify as desired, save changes and restart Illustrator.
