You double click the glyph in the palette.
In the older days you put ASCII code by alt + number on numpad How's with
UNICODE numbers?
I you want to learn all the codes by heart instead of using the palette?

In InDesign CS, you can save glyph sets on the Glyphs palette to make the process easier still.
