    If you don't want to delete an entire path, use the knife tool to split
    it where you want and delete the unwanted area.

    You can also draw another path in the shape you want to "erase" on top of an
    object and "punch" it out, which will yield the same results...

    All great responses... here's another: the reshape tool can erase stuff, sortakinda anyway, simply by rearranging/redistributing volumes in any given object.

    Or you can subselect path segments and press the delete key.
