What are you doing, exactly?
First, use any pointer tool to select the path. Next, change the stroke weight to 8 pts. in the Stroke palette. Sorry if this seems patronizing, but I cannot know your level of experience, and many people can be floored by Illustrator's complexity at first sight.

Thanks for that. I must have been a bug - it fixed itself after i restarted the computer. The poor old thing is grinding with Photoshop and Illustrator!

If that problem happens again, try going to your styles palette and clicking on the first style. I know this sounds way off base, but I had the same problem and it was because I had changed styles at some point and I couldn't change rule sizes until I rebooted. Try it, it works.
