Making text editable again - Adobe Illustrator Windows

I inherited the job of editing a menu from a pizzeria. All the management received from the prior editor was some very large (18 MB) PDF files, one for each side of the menu. Opening either file in Illustrator CS2 12.0, I find that the text is not editable as text. Selecting eny one character shows zillion control points around its periphery. But it is not possible to select a while text string (such as "pepperoni") and edit it. Is there any hope for salvaging the file as text characters I can edit? Or did the previous editor permanently render ...

    No.

    Yes.

    Your only hope is that the previous editor has kept, and is willing to part with, a version of the file with live text.

    One approach might be to lock the outlined text and rewrite live text on top of it (you may use separate layers); when you have succeeded, you may lock the live text instead and delete the outlines.
