Is it possible to create text that has more than one stroke in ID?

Yes, you can use the Gap color for strokes that have a gap to create a two-color stroke. But two colors is the maximum.
If not, does anyone know how to achieve this in Illustrator?
Use the Attributes palette to add a stroke.

Stephen,
In Illustrator, its the Appearance palette; click the palette menu button, and choose Add new stroke. As many as you wish.
