I'd love to also have the ability to see a thumbnail of each image as it is
uploaded as this example does:

That example uses PHP, but I'd like to do this with Coldfusion and Flash. Any
help would be much appreciated.

You can use Flash, but it is a bit more trickier to make it work. Here is one example of it:
