Newby help!

Thanks to anyone that can kill a few mins to respond to this.
I am very new and very lost - 4 days only.
In my 4 days I have learned mucho!!! I can now do a static page.
but....
I want to do something like these.

or
[url]www.jared.com[/url]

I have the photo stuff done, I have the Paypal shopping cart ok. but I don't
want to do static pages, too much trouble changing inventory items.

I see that the rings etc. don't seem to be static. What should I study to
make a dynamic page like these? The parts I like are the "sort by price"
and being able to filter by "mans" / "ladies" etc.

Also any help with left side menu would be great.
I would also consider buying a template for this dynamic style etc.
