I had a similar problem and called adobe tech support. Their response was that, unfortunately, adobe Illustrator and Photoshop were not designed to work over a network, so they cannot guarantee the results when you try to do so. Their only recommendation was to copy the file on to your local drive, then move it back on to the server (or other remote drive) when you are finished editting. DO NOT attempt to save the file on to the server while in Illustrator! I lost a few files this way.
I have, however had no problems using Photoshop over the network, but I make a copy on to my local drive for particularly large and important files.
