    Steve,

    I would use the Transform tool. You might want to convert the text to outlines first. (Ctl+Shf+O).
    Select the text (with the selection tool, not the text tool), choose the Transform tool from the toolbox, click a corner of the text's bounding box, and hold Ctl+Shf+Alt while dragging the corner. You will see opposite corners moving towards or away from each other, simulating perspective.

    Depending on the angle you need, skewing the text might work better. You can do this also with the Transform tool, or use the Shear tool.
