Printing Separations in Illustrator - Adobe Illustrator Windows

I have Illustrator CS educational edition, WinXP, hp psc 2500 printer. I have an Illus eps file that I created and I need to print out separations. When I go to the output tab the place where separations is is greyed out on composite. When I try to change it to separations for a pdf, it goes ungrey and gives me the choice. Default Printing Separations in Illustrator

I really need to print the separations out for a school project and cannot figure out how to do it.
I have double checked all of my colors and they are all spot colors. I believe it may have something to do with the fact that I have the educational verion or that my printer is not compatible but hopefully it is just "a button" that I need to click or change. The actual question is How can I print separations in Illustrator CS?
Thank you for any help that anyone can give!

In order to print separations, you must target a postscript device. Print to pdf is a postscript device.

Since your separations are grayed out when printing to your device, you either have a non-postscript device selected or a incorrect ppd selected for the device. (most likely a non-postscript device)

Print separations to a pdf, then open the pdf and print those pages to your non-postscript device.

    Thank you!
But now my problem is that the pdf which I created through Illus CS, when it is opened in Acrobat CS, is separate but the layers are black instead of colors. Is there a setting I am missing?
    Thank you again!

    Jennifer,

Separations are ALWAYS greyscale. That's how they're supposed to be.
