I have bought 7 as an upgrade to 6.1. but I am also moving everything to a new server. After I install 6.1, do I need to install the 6.1 Updater before I install 7?

along side a CF 6.1 instance. If the only reason you're installing 6.1
on a new server is to upgrade it, you don't need to do that. Just
install 7 and during the installation, if your CF 7 serial number is an
upgrade serial number, it will ask you for your CF 6.1 (or 6.0) serial
number. You don't need to install 6.1 first in order to install 7.
