    How do I remove the background from an image? The image was scanned @ 300 dpi and has the file extension ".jpg"?

    What sort of image on what sort of background?

    Investigate layer masks -- they would help you here.

    Basically text on a document once scanned created a white background.

    The easiest way here would be to turn the layer into an ordinary (non-Background) layer by double clicking it.
    Then use Layer Effects/Blending Options and move the white "This Layer" slider until the white disappears.

    Check the Help menu for more details.
