rgb images in CMYK documents
What are the issues with placing RBG psds into CMYK ai documents - do then
get converted to CMYK on printing/saving as PDF, or do I need to embed them,
and then convert to CMYK (or should I convert in photoshop first?)

Geth,
You may place an RGB PSD in an AI CMYK document and save it as PDF; but the colours will be changed so they must be converted twice.
I believe the safest way is to stick to either mode; probably it does not matter much where you convert, as long as the colour management is unchanged.
