Saving Adobe illustrator CS to version 10 (legacy)

Our company has bought 7 full versions of Adobe CS (which I am in the process of regestering).

We have major problems saving Adobe CS illustrator back down to version 10. The option for export as legacy really messes up the artwork document once opened again in illustrtaor 10. All the text becomes disjointed and full sentences become a series of individually placed words or letters and can not be highlighted in one go.

It seems that we must save 2 versions of the artwork files on our syetem, one as version CS (in case there are any future text changes etc.) and the other we must send out to any printing company as version 10 as no one seems to have the CS version yet.

Is there any way we can save down to version 10 that keeps the body text in one text box and not broken up?

Also, are there any problems with compatibility between illustrator CS and OSX 10.2 or OSX panther that we should know about?
