Default Saving CS files as earlier versions

I need to make a recommendation to a client (sign company) who is upgrading their Mac & graphics software. I want to make sure that if they purchase Ill CS they will be able to save files as previous versions, from 3.0 to 10. Between the sign company and various designers and suppliers exchanging files, all require various versions of AI files.
If they can be saved to earlier versions, are they completely editable (within the bounds of the version being used)? Type, particularly. I am hoping that type does not get broken into pieces as when I save a v.10 file as EPS, for example.
Their new computer will be running Panther and I don't believe that their Ill v.9 will run on that, being as it is not a native OS X app.

    Thanks for your time.
