What's the best way for me to place text into and a shape and actually take form of that shape (Ex. the word "heart" would actually be the shape of a heart)?

What version of Illustrator are you using. If version 10 or CS you can draw a heart (or use a heart vector object) over the text you wish to shape, then use Object, Envelope Distort, Make with Top Object. Voila ! If you have earlier versions, you'd have to convert the text to outlines and use the heart shape as a guide and manually shape the letters.
