I don't know about online OS theory, but I can suggest a few books.

"Modern Operating Systems" by Andy Tanenbaum.
"Operating Systems: Design and Implementation" by the same author.
"The Design and Implementation of the 4.4 BSD Operating System" by
    McKusick.

There are many others, and I am by no means an expert in this field.
Maybe you should try asking in a more appropriate group.

You would like to look at: Applied Operating System COncepts by
Silberschatz and Galvin. This one particularly doesn't focus lots on
implementation of an actual OS but goes more towards explaining the
theoritical stuff without any assumption of expertise. You could follow
Operating Systems: Design and Implementation, by Andrew S. Tanenbaum if
you also wanted some (heavy!) systems building exposure too.

In addition to what the others on comp.unix.programmer have posted, I
read a Deitel (yes, he and his son have written a library on other
topics by now) book that had a purple cover. It was a really good book
IMO, and I'm really sorry that I've seemed to have lost it in one of
several moves over the last decade...

A new edition is currently in the works. I've been reviewing chapters of
it, and so far it looks pretty good.

Cool - I have a copy of the green coloured cover (1st edition?),
and I remember some people in college having a copy of the purple
    one.

Try Oerating system Fundamentals by Milan Milankovich .
Its a green cover not too bulky book and talks fully about theory
    without going to perticular OS.
