CMYK+1Spot (Save as PSD) = Yes (But Spot color swatch appears Grey
unless it was defined prior to placing file)
The Grey swatches can be double Clicked and changed to any color.
Also You can Option Drag a Pantone Swatch over the Grey Swatch and it will take the Color.

Yes as you and ghana point out and as Mordy has noted and John Kallios there has to be better spot color support and full implementation of Device N support and of course my pet feature request for Spot Color Only mode. Epesivally helpful for duotone and multitone images.
