    Default Staple Layout Question

By default, it seems that Indesign lays out its pages as if I was going to be glue binding my final publication. But I am planning on doing a publication that is staple binded, where on one side of an 8.5" x 11" sheet will be, for example, page 6 and the other side is something like page 15 instead of 7 (which Indesign defaults to). Is there an easy way to create staple binded pubs in Indesign? The printer I go to.... Kinko's (please don't shoot me), needs me to send each page as a single EPS file so that the can rework the file for staple binding publication, (which costs me an additional work charge). Thanks for your help.
