Stopping Mysql started with mysqld_safe - MySQL

The INSTALL-BINARY file that came with my version of mysql recommends that you start mysql using "bin/mysqld_safe --user=mysql &" which works great to keep the database humming along. But nowhere have I been able to find how to safely shut down the database server. I recently made the big mistake of killing the mysqld_safe process and then killing the mysqld processes, which corrupted 2 of my databases. Thankfully, I recovered them with myisamchk, but it was pretty scary for awhile. What's the recommended way to (safely) stop mysql when started with mysql_safe? Thanks, Sal...
