Stroke!
Before I could change the colour of text from "colour palette". But now I can change it only from "swatches palette". Why?

Rarely, if ever, should you use the Color palette. The Swatches palette is the name of the game. Ink colors defined here are usable in paragraph style definitions and are globally editable.

Robert's right. The command he's talking about is Add Unnamed Colors on the Swatches palette flyout menu.
