Stroke Above Fill - Adobe Illustrator Macintosh

Hi I have just recently started using Illustrator CS after jumping from v8 so I am coming to grips with the Appearances palette. I appreciate that appearances can be re-ordered on line art elements but I haven't been able to do this with text elements. If I have some text and apply a thick stroke, can I not move the stroke below the fill so that it doesnt appear to encroach on the fill? Thanks in advance....

    If you try that with the type tool you will not be able to do this if you select it with the selection tool you will be able give the characters a new fill and stroke and then you can drag the fill below the stroke.
