choose radial type. Now it's time to choose colours. You can do it in that
pallet, in the small squares in the bottom. Click on one of them and then
check the Color palette. You can choose a colour in the usual way, just be
careful of not clicking on the big coloured square (which cancels the
operation). Then click on the other and repeat the process.

and select a Pantone one. Then drag the selected colour onto the small
square (begin or end) in the Gradient palette.
Names may differ, my Illustrator is in Spanish.

This is where you lose me. I can click on the gradient, and it will fill my
shape with the gradient. However, when trying to change one of the two
colors (black/white) to something else, it only lets me choose from the CMYK
color picker. It doesn't let me use my swatches (which include my pantone
color), nor does it let me use the color picker on the artwork itself.
Trying to pick a swatch as one of the two gradient colors turns the fill
into a solid fill. No more gradient.
