There's a bunch of templates that come with CS, but clicking on one in the open box only shows a page icon. Is there any way to view thumbnails?

No, there isn't -- unfortunately.
Go to the Help menu and choose Welcome Screen and click on the Cool Extras button. That will launch Acrobat and open a PDF file that contains a visual listing of all of the templates. Once you see one you like, remember the name of the file and then open it.
